  • 4 cups shredded green cabbage
  • 1 cup thinly sliced carrots
  • 4 green onions, chopped (white and green parts)
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • ½ tsp freshly cracked black pepper
  • Prepared egg roll wrappers for added crunch (optional)

Instructions

  1. Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil.
  2. Once hot, add the ground pork and cook until browned and crumbled (about 5-7 minutes).
  3. Stir in the minced garlic, grated ginger, shredded cabbage, sliced carrots, and chopped green onions. Cook until vegetables are tender but still crisp.
  4. Pour in the soy sauce, rice vinegar, and sesame oil; mix well to coat all ingredients evenly.
  5. Season with freshly cracked black pepper to taste.
  6. If using egg roll wrappers, bake them according to package instructions until crispy; crumble over the stir fry before serving.
