  • 8 oz rotini pasta
  • 1 cup dill pickles, chopped
  • 1/2 cup red onion, diced
  • 1/4 cup fresh dill, chopped
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tbsp mustard (yellow or Dijon)
  • 1/4 cup dill pickle juice

Instructions

  1. Cook rotini pasta in boiling water according to package instructions until al dente (8-10 minutes). Drain and cool under cold water.
  2. While the pasta cools, chop the dill pickles, red onion, and fresh dill.
  3. In a large mixing bowl, whisk together sour cream, mayonnaise, mustard, and dill pickle juice until smooth.
  4. Add cooled pasta to the bowl with the dressing. Toss in chopped pickles, red onion, and fresh dill.
  5. Gently fold all ingredients together until well combined. Adjust seasoning with additional pickle juice if desired.
