  • 16 oz full-fat cream cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 2 tbsp loose-leaf Earl Grey tea
  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted

Instructions

  1. Preheat your oven to 400°F (200°C). Line an 8-inch round springform pan with parchment paper.
  2. For the crust, mix graham cracker crumbs and melted butter until resembling wet sand, then press into the bottom of the prepared pan.
  3. Heat heavy cream in a saucepan over low heat. Add Earl Grey tea leaves and steep for five minutes. Strain and cool.
  4. In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Gradually fold in the cooled infused cream.
  5. Pour the filling into the crust and bake for 40-45 minutes until set yet slightly jiggly in the center.
  6. Cool completely at room temperature before refrigerating for at least four hours or overnight.
