- 16 oz full-fat cream cheese
- 1 cup granulated sugar
- 3 large eggs
- 1 cup heavy cream
- 2 tbsp loose-leaf Earl Grey tea
- 1 cup graham cracker crumbs
- 4 tbsp unsalted butter, melted
Instructions
- Preheat your oven to 400°F (200°C). Line an 8-inch round springform pan with parchment paper.
- For the crust, mix graham cracker crumbs and melted butter until resembling wet sand, then press into the bottom of the prepared pan.
- Heat heavy cream in a saucepan over low heat. Add Earl Grey tea leaves and steep for five minutes. Strain and cool.
- In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Gradually fold in the cooled infused cream.
- Pour the filling into the crust and bake for 40-45 minutes until set yet slightly jiggly in the center.
- Cool completely at room temperature before refrigerating for at least four hours or overnight.
