  • 1 cup bell peppers, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup cheddar cheese, shredded
  • 1/2 cup cooked bacon or sausage, crumbled
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin with non-stick spray or line it with muffin liners.
  2. In a mixing bowl, whisk together the eggs and season with salt and pepper.
