Ingredients
For the Chicken Roulade
- 2 large chicken breasts, butterflied and pounded thin
- Salt and black pepper, to taste
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
For the Filling
- 1 cup fresh spinach, sautéed or steamed
- ½ cup cream cheese (softened)
- ¼ cup shredded mozzarella or Swiss cheese

- 1 tablespoon chopped fresh parsley
- Salt and pepper, to taste

- Pan gravy or light cream sauce

Prepare the Chicken:
Butterfly the chicken breasts and pound them to an even thickness.
Season both sides with salt, pepper, garlic powder, and paprika. -
Prepare the Filling:
In a bowl, mix the cooked spinach, cream cheese, shredded cheese, Dijon mustard, parsley, salt, and pepper. -
Assemble the Roulade:
Spread the filling evenly over each chicken breast.
Roll tightly from the shorter side and secure with toothpicks or kitchen twine. -
Sear:
Heat olive oil in a skillet and sear the roulades on all sides until golden. -
Bake:
Transfer to a baking dish and cook in a preheated oven at 180°C (350°F) for 20–25 minutes, or until internal temperature reaches 75°C (165°F). -
Serve:
Remove toothpicks, slice into rounds, and serve with your favorite sides or sauce.
