Description

This Festive Chicken Roulade is a tender butterflied chicken breast rolled with a flavorful spinach and cheese filling, seared until golden, then baked to perfection. For the Chicken Roulade

  • 2 large chicken breasts, butterflied and pounded thin
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

For the Filling

  • 1 cup fresh spinach, sautéed or steamed
  • ½ cup cream cheese (softened)
  • ¼ cup shredded mozzarella or Swiss cheese
  • 1 tablespoon Dijon mustard

  • 1 tablespoon chopped fresh parsley
  • Salt and pepper, to taste

Optional for Serving

  • Pan gravy or light cream sauce
  • Fresh herbs for garnish

Instructions

  • Prepare the Chicken:
    Butterfly the chicken breasts and pound them to an even thickness.
    Season both sides with salt, pepper, garlic powder, and paprika.

  • Prepare the Filling:
    In a bowl, mix the cooked spinach, cream cheese, shredded cheese, Dijon mustard, parsley, salt, and pepper.

  • Assemble the Roulade:
    Spread the filling evenly over each chicken breast.
    Roll tightly from the shorter side and secure with toothpicks or kitchen twine.

  • Sear:
    Heat olive oil in a skillet and sear the roulades on all sides until golden.

  • Bake:
    Transfer to a baking dish and cook in a preheated oven at 180°C (350°F) for 20–25 minutes, or until internal temperature reaches 75°C (165°F).

  • Serve:
    Remove toothpicks, slice into rounds, and serve with your favorite sides or sauce.
