  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 cup vegetable oil
  • 1 cup grated zucchini (about 1 medium zucchini)
  • 1 cup peeled, chopped apples (about 2 medium apples)
  • 4 oz cream cheese (for glaze)
  • 1 cup powdered sugar (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, allspice, granulated sugar, and brown sugar until combined.
  3. In another bowl, beat eggs and oil together. Stir in grated zucchini and chopped apples.
  4. Pour the wet mixture into the dry ingredients and mix gently until just combined.
  5. Transfer batter into prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  6. While cooling, prepare the cream cheese glaze by beating cream cheese with powdered sugar until smooth. Drizzle over cooled bread before slicing.
