Ingredients

  • 1 lb fresh shrimp (peeled and deveined)
  • 2 ripe avocados (sliced)
  • 1 cup diced mango
  • 1/4 cup red onion (chopped)
  • 2 tbsp fresh lime juice
  • 1 tsp chili powder
  • 1/4 cup fresh cilantro (chopped)
  • 2 cloves garlic (minced)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse shrimp under cold water, pat dry, and season with salt, pepper, and chili powder.
  2. Heat olive oil in a pan over medium-high heat. Cook shrimp for about 3-4 minutes per side until pink and opaque.
  3. In a bowl, mix diced mango, chopped red onion, cilantro, and lime juice to create the salsa.
  4. Slice avocados in half, remove the pit, scoop out the flesh into chunks, and drizzle with lime juice.
  5. Assemble bowls by layering cooked shrimp on avocado chunks and topping with mango salsa.
  6. For the lime-chili sauce, mix additional lime juice with chili powder and drizzle over assembled bowls before serving.
