  • 1 pound fresh shrimp, peeled and deveined
  • 1 store-bought pie crust
  • 1 cup sour cream
  • 1 cup chopped bell peppers (mixed colors)
  • ½ cup chopped onion
  • 3 large eggs
  • 2 tsp Old Bay seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet, heat olive oil over medium heat. Sauté chopped bell peppers and onions until softened (about 5 minutes).
  3. Add shrimp to the skillet and cook until pink (3–4 minutes). Remove from heat.
  4. In a large bowl, combine sautéed shrimp and veggies with sour cream, eggs, Old Bay seasoning, salt, and pepper. Mix well.
  5. Pour mixture into the prepared pie crust, spreading evenly.
  6. Bake for 30–35 minutes or until the top is golden brown and set in the center.
  7. Allow to cool slightly before slicing and serving.
