  • 2 fresh lobster tails (about 1 lb total)
  • 2 tbsp unsalted butter
  • 1 cup shallots, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup white wine
  • 1 cup heavy cream
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • 1 cup Gruyère cheese, grated
  • 1/2 cup panko breadcrumbs

Instructions

  1. Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Split lobster tails lengthwise and remove the meat, chopping it into bite-sized pieces.
  3. In a skillet over medium heat, melt butter and sauté shallots and garlic until fragrant (about 3 minutes).
  4. Pour in white wine and simmer until reduced by half. Add heavy cream, lemon juice, salt, pepper, and lobster meat; stir in half of the Gruyère cheese until bubbly.
  5. Spoon mixture back into lobster shells (or a baking dish), top with remaining cheese and breadcrumbs.
  6. Bake for 15-20 minutes until golden brown on top. Drizzle with extra lemon juice before serving.
