- 2 tbsp unsalted butter
- 1 cup shallots, finely chopped
- 3 cloves garlic, minced
- 1/2 cup white wine
- 1 cup heavy cream
- 2 tbsp lemon juice
- Salt and pepper to taste
- 1 cup Gruyère cheese, grated
- 1/2 cup panko breadcrumbs
Instructions
- Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- Split lobster tails lengthwise and remove the meat, chopping it into bite-sized pieces.
- In a skillet over medium heat, melt butter and sauté shallots and garlic until fragrant (about 3 minutes).
- Pour in white wine and simmer until reduced by half. Add heavy cream, lemon juice, salt, pepper, and lobster meat; stir in half of the Gruyère cheese until bubbly.
- Spoon mixture back into lobster shells (or a baking dish), top with remaining cheese and breadcrumbs.
- Bake for 15-20 minutes until golden brown on top. Drizzle with extra lemon juice before serving.
