- 2 bay leaves
- Salt and pepper to taste
- 1 baguette, sliced and toasted
- 1 cup grated Gruyère cheese
Instructions
- In a large pot or Dutch oven over medium-high heat, sear the beef short ribs until browned on all sides (about 3-4 minutes per side). Remove from pot.
- Reduce heat to medium-low; add sliced onions with a pinch of salt. Cook until caramelized (25-30 minutes), stirring occasionally.
- Add minced garlic to the onions and cook for an additional minute. Pour in red wine to deglaze the pot, scraping up any bits from the bottom.
- Return short ribs to the pot along with beef broth, thyme, bay leaves, salt, and pepper. Bring to a gentle simmer.
- Cover and let simmer on low heat for about two hours until beef is tender. Alternatively, transfer to a slow cooker after Step 4 and cook on low for six hours.
- Remove bay leaves before serving. Ladle soup into bowls topped with toasted baguette slices and melted Gruyère cheese.
