  • 2 lbs bone-in beef short ribs
  • 4 medium yellow onions, thinly sliced
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 cup red wine
  • 2 tsp fresh thyme leaves (or 1 tsp dried thyme)
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 baguette, sliced and toasted
  • 1 cup grated Gruyère cheese

Instructions

  1. In a large pot or Dutch oven over medium-high heat, sear the beef short ribs until browned on all sides (about 3-4 minutes per side). Remove from pot.
  2. Reduce heat to medium-low; add sliced onions with a pinch of salt. Cook until caramelized (25-30 minutes), stirring occasionally.
  3. Add minced garlic to the onions and cook for an additional minute. Pour in red wine to deglaze the pot, scraping up any bits from the bottom.
  4. Return short ribs to the pot along with beef broth, thyme, bay leaves, salt, and pepper. Bring to a gentle simmer.
  5. Cover and let simmer on low heat for about two hours until beef is tender. Alternatively, transfer to a slow cooker after Step 4 and cook on low for six hours.
  6. Remove bay leaves before serving. Ladle soup into bowls topped with toasted baguette slices and melted Gruyère cheese.
