- 2 pounds Yukon Gold potatoes
- 2 large sweet onions, sliced
- 4 tablespoons unsalted butter
- 1/2 cup heavy cream
- 1 cup shredded Gruyère cheese
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Boil peeled and chopped Yukon Gold potatoes in salted water until fork-tender, about 15-20 minutes.
- While the potatoes cook, melt butter in a skillet over medium heat. Add sliced onions and caramelize for 15-20 minutes until golden brown.
- Drain the potatoes and return them to the pot. Add heavy cream, garlic powder, salt, and pepper. Smash until desired consistency is reached.
- Fold in half of the caramelized onions and most of the Gruyère cheese.
- Transfer the mixture to a greased baking dish, top with remaining onions and cheese, then bake at 400°F (200°C) for 15-20 minutes until bubbly and golden brown.
- Let cool for five minutes before serving.
