  • 2 pounds Yukon Gold potatoes
  • 2 large sweet onions, sliced
  • 4 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 1 cup shredded Gruyère cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Boil peeled and chopped Yukon Gold potatoes in salted water until fork-tender, about 15-20 minutes.
  2. While the potatoes cook, melt butter in a skillet over medium heat. Add sliced onions and caramelize for 15-20 minutes until golden brown.
  3. Drain the potatoes and return them to the pot. Add heavy cream, garlic powder, salt, and pepper. Smash until desired consistency is reached.
  4. Fold in half of the caramelized onions and most of the Gruyère cheese.
  5. Transfer the mixture to a greased baking dish, top with remaining onions and cheese, then bake at 400°F (200°C) for 15-20 minutes until bubbly and golden brown.
  6. Let cool for five minutes before serving.
