  • 4 ears fresh corn, shucked and kernels removed
  • 6 slices bacon, cooked until crispy and chopped
  • 2 tablespoons unsalted butter
  • ½ cup heavy cream
  • ¼ cup green onions, chopped
  • Salt & pepper to taste

Instructions

  1. In a large skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels, then chop into pieces.
  2. In the same skillet, melt the butter over medium heat. Add the corn kernels and sauté for 5-7 minutes until tender yet crisp.
  3. Stir in the chopped green onions and bacon pieces. Pour in the heavy cream and season with salt and pepper. Mix well.
  4. Let simmer on low heat for an additional minute to meld flavors.
