  • 8 oz linguine pasta
  • 1 lb large fresh shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Cook the linguine in boiling salted water according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. In a large skillet over medium heat, melt olive oil and 2 tbsp of butter. Add shrimp and sauté for 3-4 minutes until pink and opaque.
  3. Stir in minced garlic and cook for an additional 30 seconds until fragrant.
  4. Add lemon juice, remaining butter, salt, and pepper; stir until combined.
  5. Toss drained pasta into the skillet with the shrimp mixture, adding reserved pasta water as needed to achieve desired consistency.
  6. Garnish with chopped parsley and serve hot.
