  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 4 garlic knots (store-bought or homemade)
  • 1 cup marinara sauce
  • 8 oz sliced fresh mozzarella cheese
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Cook the chicken until golden brown, about 5–7 minutes per side.
  3. Once the internal temperature reaches 165°F, remove the chicken from the skillet and let it rest. In the same skillet, pour in marinara sauce and simmer until heated through.
  4. Slice garlic knots in half horizontally. Place cooked chicken on each bottom half, top with marinara sauce and several slices of mozzarella.
  5. Bake assembled sandwiches for 10–15 minutes until cheese is melted and bubbly.
  6. Serve with extra marinara drizzled on top.
