  • 1 pound large shrimp, peeled and deveined
  • 4 cloves fresh garlic, minced
  • 2 ripe avocados
  • 1 baguette, sliced into ½-inch pieces
  • 3 tablespoons extra virgin olive oil, divided
  • 2 tablespoons freshly squeezed lemon juice
  • ½ teaspoon chili flakes (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange baguette slices on the baking sheet and brush each lightly with olive oil. Toast for 5-7 minutes until golden brown.
  3. In a skillet over medium heat, add 1 tablespoon olive oil and minced garlic. Sauté until fragrant; then add shrimp and chili flakes. Cook until shrimp turn pink (about 3-4 minutes). Season with salt and pepper.
  4. In a bowl, mash avocados with lemon juice, salt, and pepper until smooth.
  5. Spread mashed avocado on toasted baguette slices and top with garlic shrimp.
