Instructions
- Rinse rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, bring broth to a gentle boil.
- In another pot, heat olive oil over medium heat. Optionally sauté minced garlic until fragrant (about 1 minute).
- Add rinsed rice to the pot with olive oil, stirring to coat each grain. Pour in hot broth and bring to a boil.
- Once boiling, reduce heat to low, cover tightly, and simmer for about 15 minutes. Near the end of cooking time, add lemon zest and juice.
- After cooking, remove from heat and let sit covered for an additional 5 minutes. Fluff with a fork and garnish with fresh herbs before serving.
