Ingredients

  • 8 oz rotini pasta
  • 1 cup diced cucumbers
  • 1 cup halved cherry tomatoes
  • 1/2 cup thinly sliced red onion
  • 1/2 cup crumbled feta cheese
  • 1/3 cup pitted Kalamata olives
  • 1/4 cup extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente (about 8 minutes). Drain and rinse under cold water.
  2. In a large bowl, combine diced cucumbers, halved cherry tomatoes, sliced red onion, crumbled feta cheese, and Kalamata olives.
  3. In a separate bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  4. Add cooled pasta to the vegetable mixture. Drizzle with dressing and toss gently until well combined.
