Instructions
- Cook pasta in salted boiling water according to package instructions until al dente. Drain and reserve some pasta water.
- In a skillet, heat olive oil over medium heat. Sauté minced garlic for about one minute until fragrant.
- In a blender, combine cooked spinach, silken tofu, sautéed garlic (cooled), lemon juice, salt, and pepper. Blend until smooth.
- Toss the drained pasta with the spinach sauce in the skillet. If too thick, add reserved pasta water until the desired consistency is reached.
- Heat through and adjust seasoning before serving.
