  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 4 garlic cloves, minced
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • 4 pita breads
  • 1 cucumber, grated and drained
  • 1 cup full-fat Greek yogurt
  • Fresh dill (optional)

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  2. Place chicken in a resealable bag or dish; pour marinade over it. Chill for at least 30 minutes (or overnight).
  3. Mix grated cucumber with Greek yogurt, minced garlic, dill (if using), salt, and pepper to make tzatziki sauce.
  4. Preheat grill to medium-high heat; grill marinated chicken for 6-8 minutes on each side until fully cooked.
  5. Slice the grilled chicken and warm pita briefly on the grill.
  6. Assemble gyros by layering chicken strips with tzatziki sauce and your favorite toppings.
  7. Serve immediately with extra tzatziki on the side.
