  • 4 boneless, skinless chicken breasts (680g)
  • 8 oz (225g) fresh mozzarella cheese
  • 1 cup fresh basil leaves (25g)
  • 2 large ripe tomatoes, sliced (300g)
  • 2 tbsp balsamic glaze
  • 3 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat (375°F to 400°F). Clean the grates to prevent sticking.
  2. In a bowl, mix the olive oil, garlic powder, salt, and pepper. Coat the chicken breasts with this mixture and marinate for at least 30 minutes.
  3. Grill the marinated chicken for about 6-7 minutes on each side until it reaches an internal temperature of 165°F (75°C).
  4. During the last two minutes of grilling, add mozzarella slices on top of each breast along with tomato slices and basil leaves. Close the lid to melt the cheese.
  5. Remove from grill and drizzle with balsamic glaze before serving.
