  • 3 cloves fresh garlic, minced
  • 2 tsp dried oregano
  • 2 sprigs fresh rosemary, chopped
  • 2 large sweet potatoes, peeled and cut into fries
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lime
  • 2 ripe avocados, mashed
  • 1 medium tomato, diced
  • 1/4 red onion, finely chopped
  • Salt and pepper to taste
  • 1/2 tsp chili powder for salsa

Instructions

  1. Marinate the chicken by mixing garlic, oregano, rosemary, olive oil, lime juice, salt, and pepper; coat the chicken and let it marinate for at least 30 minutes.
  2. Preheat the oven to 425°F (220°C). Toss sweet potato fries in olive oil and salt; spread them on a baking sheet.

  4. Grill marinated chicken over medium-high heat for about 6-7 minutes per side until cooked (165°F internal temperature).
  5. Prepare avocado salsa by combining mashed avocados with tomato, red onion, lime juice, salt, pepper, and chili powder.
