Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 cups fresh pineapple chunks
  • 1/2 cup jerk marinade
  • 2 tbsp freshly squeezed lime juice
  • 6 wooden or metal skewers

Instructions

  1. Marinate the shrimp in jerk marinade and lime juice for at least 30 minutes in the fridge.
  2. While marinating, chop pineapple into bite-sized pieces and soak wooden skewers in water if using.
  3. Alternate threading shrimp and pineapple onto skewers.
  4. Preheat grill to medium-high heat (400°F).
  5. Grill skewers for 2-3 minutes on each side until shrimp are opaque and pineapple is charred.
  6. Serve immediately, drizzling with additional lime juice if desired.
