  • 3 tbsp white or yellow miso paste
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp mirin
  • 1 tbsp sesame oil
  • 2 green onions, thinly sliced (for garnish)
  • 1 tbsp toasted sesame seeds (for garnish)

Instructions

  1. Slice the eggplants into 1-inch thick rounds and sprinkle lightly with salt. Let sit for 20 minutes to draw out moisture.
  2. In a small bowl, whisk together miso paste, soy sauce, mirin, and sesame oil until smooth.
  3. Preheat the grill to medium-high heat (400°F).
  4. Brush the eggplant slices generously with the miso glaze on both sides.
  5. Grill the eggplants for 5-7 minutes per side until soft and charred.
