Ingredients

  • 8 oz cheese-filled tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, diced (mixed colors)
  • ½ cup red onion, thinly sliced
  • ¼ cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini in salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
  2. While the tortellini cools, dice the cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces.
  3. In a bowl or jar, combine olive oil and balsamic vinegar. Add salt and pepper; whisk or shake until emulsified.
