  • 1 cup diced bell peppers (any color)
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 2 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onions and bell peppers; sauté for about 5 minutes until softened. Stir in minced garlic.
  2. Add ground turkey into the skillet. Cook until browned, breaking it apart as it cooks (about 6–8 minutes). Season with cumin, paprika, salt, and pepper.
  3. Stir in rice, diced tomatoes (with juice), and chicken broth. Bring to a gentle boil while stirring occasionally.
  4. Reduce heat to low; cover tightly and simmer for about 20 minutes or until liquid is absorbed and rice is tender. Avoid lifting the lid too soon.
  5. Remove from heat; let sit covered for an additional 5 minutes. Fluff rice with a fork before serving.
