  • 1 lb lean ground turkey
  • 2 medium sweet potatoes (about 1 lb), diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers (any color), chopped
  • 2 cups fresh spinach
  • 2 tbsp extra virgin olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Wash and chop the sweet potatoes, onion, bell peppers, and garlic.
  2. Heat olive oil in a large skillet over medium heat. Add diced sweet potatoes, season with salt and pepper, and sauté for about 10 minutes until slightly softened.
  3. Add the chopped onion and minced garlic to the skillet; stir until onions become translucent (about 5 minutes).
  4. Push the vegetables to one side of the skillet. If needed, add more olive oil and add ground turkey on the other side. Cook until browned, breaking it apart (about 6–8 minutes).
  5. Combine everything in the skillet; stir in bell peppers along with cumin and paprika for flavor incorporation.
  6. Fold in spinach and let it wilt for about 2 minutes before serving.
