  • 4 medium russet potatoes, thinly sliced (about 2 lbs)
  • 2 cups diced ham (pre-cooked)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup whole milk
  • 1 tsp onion powder
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup panko breadcrumbs
  • 3 tbsp butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine sliced potatoes, diced ham, cream of mushroom soup, milk, onion powder, and half of the cheddar and mozzarella cheeses. Mix until well combined.
  3. Grease a casserole dish and pour the mixture evenly into it.
  4. Top with remaining cheeses and panko breadcrumbs mixed with melted butter.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown and bubbly.
  6. Let cool slightly before serving.
