  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup creamy peanut butter
  • 1/2 cup unsweetened cocoa powder
  • 1/3 cup maple syrup (or honey)
  • 2 large eggs (or 2 flax eggs for vegan)
  • 1 tsp vanilla extract
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a food processor, blend black beans, peanut butter, cocoa powder, maple syrup, eggs, vanilla extract, and baking powder until smooth.
  3. Pour the mixture into the prepared pan and spread it evenly.
  4. Bake for 25-30 minutes until edges pull away from sides and a toothpick inserted comes out clean.
  5. Allow to cool in the pan for at least 10 minutes before lifting out and slicing.
