  • 9 whole wheat lasagna noodles (no-boil)
  • 1 cup part-skim ricotta cheese
  • 2 cups thinly sliced zucchini
  • 2 cups fresh spinach
  • 2 cups marinara sauce (low-sugar)
  • 1 cup low-fat shredded mozzarella cheese
  • ¼ cup fresh basil, chopped
  • Salt to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice zucchini and chop spinach.
  3. In a bowl, mix ricotta cheese with chopped basil and a pinch of salt.
  4. In a baking dish, layer marinara sauce, noodles, ricotta mixture, zucchini, spinach, and mozzarella. Repeat until all ingredients are used.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden brown.
