  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk (or almond milk)
  • 1 cup dried cranberries
  • 1 cup chopped walnuts (lightly toasted)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, baking powder, sugar, salt, cinnamon, and nutmeg.
  3. In another bowl, beat eggs and mix in milk until smooth.
  4. Gently fold in the cranberries and walnuts into the wet mixture.
  5. Combine wet and dry ingredients, stirring until just mixed (lumps are okay).
  6. Pour the batter into the prepared loaf pan and bake for 55-65 minutes or until a toothpick comes out clean.
  7. Allow to cool slightly before removing from the pan.
