  • 2 pounds beef tenderloin
  • 2 tsp coarse salt
  • 1 tsp black pepper
  • 2 tbsp extra virgin olive oil
  • 2 sprigs fresh thyme
  • 4 cloves garlic, minced
  • ½ cup red wine
  • 1 cup low-sodium beef broth
  • 2 tbsp unsalted butter

Instructions

  1. Preheat your oven to 400°F (200°C) and heat a large oven-safe skillet over medium-high heat.
  2. Season the beef tenderloin generously with salt and pepper. Sear the beef on all sides in olive oil until golden brown (3-4 minutes per side).
  3. Remove from heat, top with minced garlic and fresh thyme, then return to stovetop for another minute.
  4. Pour in red wine, scraping browned bits from the skillet; let simmer for about two minutes.
  5. Add beef broth and butter, stirring well to combine. Adjust seasoning if necessary.
  6. Transfer the skillet to the preheated oven; roast for about 25-30 minutes or until desired doneness (medium rare at around 130°F/54°C).
  7. Allow to rest for ten minutes before slicing and serving drizzled with sauce.
