- 9 lasagna noodles (oven-ready)
- 15 oz ricotta cheese
- 3 cups fresh spinach (washed)
- 8 oz mushrooms (sliced)
- 1 medium zucchini (thinly sliced)
- 24 oz marinara sauce
- 2 cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 large egg
- Salt and pepper (to taste)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish with nonstick spray.
- Sauté sliced mushrooms in a skillet over medium heat until golden brown. Add spinach and cook until wilted. Set aside.
- In a bowl, mix ricotta with salt, pepper, and egg. Stir in half of the sautéed vegetables.
- Layer the baking dish with marinara sauce, noodles, ricotta mixture, zucchini slices, more marinara sauce, and mozzarella cheese. Repeat layers until ingredients are used up.
- Top with remaining noodles covered in marinara sauce and sprinkle with mozzarella and Parmesan cheese. Cover tightly with foil.
- Bake for approximately 45 minutes; remove foil during the last 10 minutes to brown the top.
