  • 4 large bell peppers (red, yellow, or green)
  • 1 lb lean ground beef or lamb
  • 1 cup uncooked long-grain rice
  • 1 medium onion, finely chopped
  • 1 cup tomato sauce (plus extra for drizzling)
  • 2 tsp cumin
  • 2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the bell peppers by cutting off their tops and removing the seeds.
  3. In a skillet over medium heat, sauté the chopped onion until translucent. Add the ground meat and cook until browned. Stir in cumin, paprika, salt, and pepper.
  4. Mix in the uncooked rice and half of the tomato sauce; let simmer for about 10 minutes.
  5. Stuff each bell pepper generously with the filling, placing them upright in a baking dish.
  6. Drizzle remaining tomato sauce over peppers and drizzle with olive oil. Cover loosely with foil and bake for about 45 minutes until tender.
