  • 1 cup canned pumpkin puree
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tsp baking soda
  • ½ tsp baking powder

  • 2 large eggs (room temperature)
  • ⅓ cup vegetable oil (or applesauce)
  • ¼ cup milk (whole or any type)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, granulated sugar, and brown sugar.
  3. In another bowl, mix pumpkin puree, eggs, vegetable oil, milk, and vanilla extract until smooth.
  4. Gradually combine wet ingredients into the dry mixture; stir gently until just combined—do not overmix.
  5. Fill each muffin cup about two-thirds full and sprinkle with cinnamon sugar if desired.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Cool in the pan for 5 minutes before transferring to a wire rack.
