Ingredients

  • 8 oz pasta (spaghetti or your choice)
  • 1 cup hummus (store-bought or homemade)
  • 3 cloves fresh garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach or kale, chopped
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Boil the pasta in salted water according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant (about 1 minute).
  3. Lower the heat and mix in hummus until smooth; add reserved pasta water if the sauce is too thick.
  4. Fold in cherry tomatoes and greens, cooking for about 2-3 minutes until wilted.
  5. Combine the drained pasta with the veggies and sauce, tossing gently to coat evenly. Season with salt and pepper.
  6. Serve hot, garnished with extra tomatoes or herbs if desired.
