- 2 dried bay leaves
- 1/4 cup all-purpose flour
- 3 tbsp butter
- 1/2 cup whole milk
- 2 tsp baking powder
- 1/4 cup fresh parsley, chopped
Instructions
- Heat oil in a large pot over medium-high heat. Season beef with salt and pepper; brown in batches until crusty. Set aside.
- In the same pot, sauté onions and carrots until tender (about 5 minutes). Add garlic and cook for an additional minute.
- Deglaze the pot with Irish stout, scraping any browned bits. Stir in beef broth, thyme, bay leaves, and browned beef; bring to a boil.
- Reduce heat to low, cover, and simmer for about 2 hours.
- For dumplings: Mix flour, baking powder, salt, butter, milk, and parsley until combined.
- Drop spoonfuls of dumpling dough onto stew surface. Cover and steam for about 15 minutes until fluffy.
