Ingredients

Scale
  • 1 sheet puff pastry (thawed)
  • 2 cups mixed berries (fresh or frozen)
  • 1/4 cup granulated sugar (adjust to taste)
  • 2 tbsp custard powder
  • 1 cup whole milk
  • 2 large eggs
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a floured surface to about 1/8 inch thick, then fit it into the prepared baking sheet.
  3. In a saucepan over medium heat, combine milk, sugar, and custard powder. Stir until thickened and bubbly; remove from heat and stir in vanilla extract.
  4. Let the custard cool slightly before folding in the mixed berries.
  5. Pour the berry custard filling into the center of the pastry, leaving space at the edges.
  6. Bake for 25-30 minutes or until golden brown. Allow to cool slightly before serving.
