  • 4 boneless, skinless chicken breasts
  • 1 cup Italian-style breadcrumbs
  • 2 cups marinara sauce
  • 2 cups fresh mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 3 tablespoons extra virgin olive oil
  • Fresh basil leaves (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and pepper, then coat them in breadcrumbs.
  2. Heat olive oil in a skillet over medium heat. Fry each chicken breast until golden brown, about 4-5 minutes per side.
  3. Transfer browned chicken to a baking dish. Top with marinara sauce and sprinkle with mozzarella and Parmesan cheeses.
  4. Bake for approximately 20 minutes until cheese is bubbly and golden brown.
  5. Slice open sub rolls and layer with shredded lettuce if desired. Place cheesy chicken inside the rolls and add more marinara if preferred.
