  • 2 cups icing sugar
  • 3 large egg whites (room temperature)
  • 1/4 cup granulated sugar
  • 1/4 cup freshly squeezed key lime juice
  • 1/4 cup unsalted butter (softened)
  • Food coloring (optional)

Instructions

  1. Preheat your oven to 300°F (150°C). Line baking sheets with parchment paper.
  2. In a bowl, sift together the almond flour and icing sugar.
  3. In another bowl, whip egg whites until frothy; gradually add granulated sugar until stiff peaks form.
  4. Gently fold in key lime juice and food coloring into the egg whites.
  5. Pipe small circles onto the prepared baking sheets and let rest for 30 minutes.
  6. Bake macarons for 15-20 minutes until firm but slightly soft inside.
  7. While cooling, beat softened butter with key lime juice and zest; gradually add powdered sugar until smooth.
  8. Pair similar-sized shells together, pipe filling onto one shell, and press gently with another shell.
