  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar (light)
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • ½ cup vegetable oil
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • ½ cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until smooth.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. If using, fold in chopped nuts.
  6. Pour batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
