Instructions
- Preheat oven to 375°F (190°C). Cut tops off bell peppers and remove seeds.
- In a skillet, brown ground beef over medium heat until fully cooked; drain excess fat.
- Stir in black beans, corn, and taco seasoning. Simmer for 5 minutes.
- Stuff each pepper with the beef mixture and place upright in a baking dish.
- Top with shredded cheese and cover with foil; bake for 25 minutes.
