  • 4 large bell peppers (any color)
  • 1 lb lean ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 2 tbsp taco seasoning
  • 1 cup shredded cheddar cheese
  • Sour cream (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Cut tops off bell peppers and remove seeds.
  2. In a skillet, brown ground beef over medium heat until fully cooked; drain excess fat.
  3. Stir in black beans, corn, and taco seasoning. Simmer for 5 minutes.
  4. Stuff each pepper with the beef mixture and place upright in a baking dish.
  5. Top with shredded cheese and cover with foil; bake for 25 minutes.
  6. Remove foil, cool slightly, add sour cream if desired, and serve.
