  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 tbsp fresh mint, chopped
  • 2 tbsp fresh parsley, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup Greek yogurt
  • Juice of 1 lemon
  • 2 tbsp olive oil

Instructions

  1. Marinate the Lamb: Mix olive oil, minced garlic, chopped herbs, lemon juice, salt, and pepper in a bowl. Add lamb and let it marinate for at least one hour.
  2. Prepare the Grill: Preheat your grill or skillet over medium-high heat.
  3. Cook the Lamb: Grill marinated lamb for about 4-5 minutes on each side until cooked through (135°F for medium rare).
  4. Assemble Your Bowls: While the lamb rests, chop cucumbers and tomatoes. Mix Greek yogurt with extra garlic and lemon juice to create the sauce.
