  • 2 tbsp olive oil
  • 1 tsp ground cinnamon
  • 3 tbsp pure maple syrup
  • 1/4 cup chopped pecans or walnuts
  • 1/2 cup Greek yogurt (or vegan alternative)
  • Pinch of sea salt

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and scrub the sweet potatoes thoroughly. Pat dry and slice into rounds or cubes.
  3. In a large bowl, toss the sweet potato pieces with olive oil, cinnamon, and a pinch of sea salt until evenly coated.
