  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1 cup orzo pasta
  • 4 cups low-sodium chicken broth
  • 1/4 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Season the chicken with salt and pepper. Heat a large skillet over medium-high heat with olive oil. Brown the chicken on both sides for about 5-7 minutes until cooked through. Remove and let rest.
  2. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  3. Stir in orzo and add chicken broth. Bring to a simmer and cook until al dente, about 8-10 minutes, stirring occasionally.
  4. Return the chicken to the skillet, adding lemon juice, zest, soy sauce, and Dijon mustard. Mix well and heat through for another two minutes.
  5. Taste and adjust seasoning if needed before serving hot.
