- 1 cup orzo pasta
- 4 cups low-sodium chicken broth
- 1/4 cup freshly squeezed lemon juice

- 2 tbsp low-sodium soy sauce
- 1 tbsp Dijon mustard
- Salt and pepper to taste

Instructions
- Season the chicken with salt and pepper. Heat a large skillet over medium-high heat with olive oil. Brown the chicken on both sides for about 5-7 minutes until cooked through. Remove and let rest.

- Return the chicken to the skillet, adding lemon juice, zest, soy sauce, and Dijon mustard. Mix well and heat through for another two minutes.
