- 3 large eggs (for curd)
- 1/2 cup heavy cream
Instructions

- In a mixing bowl, combine flour and sugar. Cut in chilled butter until crumbly.
- Gradually add cold water until dough forms; wrap in plastic wrap and chill for 30 minutes.
- Roll out the dough to about 12 inches wide and transfer it to a tart pan. Trim excess dough.
- Bake the crust with parchment paper and pie weights for 15 minutes, then remove weights and bake for another 5 minutes until golden.
- For the lemon curd, whisk together eggs, sugar, lemon juice, and zest in a saucepan over medium heat until thickened (about 10 minutes).
- Stir in heavy cream until smooth. Pour into cooled tart shell and chill for at least two hours before serving.
