  3. In another bowl, cream butter and granulated sugar until light and fluffy.
  4. Beat in the egg, lemon juice, and zest until combined.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Chill the dough for at least one hour before rolling it out to 1/4 inch thickness.
  7. Cut into desired shapes and bake for 10-12 minutes until lightly golden. Let cool completely before filling.
