Ingredients

  • 1 cup fresh lemon juice (about 46 lemons)
  • 1 cup granulated sugar
  • 1 cup filtered water
  • 1/4 cup pineapple juice (optional)

Instructions

  1. Juice the lemons until you have 1 cup of lemon juice, straining out seeds and pulp.
  2. In a saucepan, combine sugar and water over medium heat. Stir until sugar dissolves completely; let cool.
  3. Mix the cooled syrup with lemon juice and pineapple juice (if using) in a bowl.
  4. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until thick.
  5. Transfer to an airtight container and freeze for at least four hours until firm.
  6. Serve in bowls or cones, garnished with lemon zest or mint leaves if desired.
