  • 8 oz Andouille sausage, sliced
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain rice
  • 14.5 oz canned diced tomatoes (fire-roasted recommended)
  • 3 cups low-sodium chicken broth
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Prep your ingredients: Chop bell peppers and onion; mince garlic; dice chicken; slice sausage.
  2. In a large pot over medium heat, add olive oil. Sauté sliced sausage until browned (about 5 minutes), then remove from pot.
  3. In the same pot, add onions and bell peppers; sauté until softened (about 5 minutes). Stir in minced garlic for an additional minute.
  4. Return the sausage to the pot along with diced chicken and Cajun seasoning; stir to coat.
  5. Add rice, canned tomatoes (with juices), and chicken broth. Bring to a boil, then reduce heat to low, cover tightly, and simmer for about 20 minutes or until rice is tender.
  6. Fluff with a fork and serve hot.
