  • 2 tsp culinary-grade matcha powder
  • 1/2 cup unsalted butter (cold, cubed)
  • 1/3 cup almond paste
  • 1/4 cup granulated sugar
  • 1 tsp active dry yeast
  • 1/2 cup whole milk
  • 1 egg (for brushing)

Instructions

  1. In a bowl, combine flour, sugar, salt, yeast, and matcha powder. Mix in cold butter until crumbly. Add milk and knead until smooth.
  2. Wrap the dough in plastic wrap and chill for at least 2 hours.
  3. Roll chilled dough into a rectangle about half an inch thick. Fold into thirds like a letter; roll out again. Repeat twice more to create layers.
  4. Cut triangles from the dough, place almond paste at the base, and roll tightly from base to tip.
  5. Preheat oven to 375°F (190°C). Place croissants on lined baking sheets, brush with beaten egg, and bake for 20-25 minutes until golden brown.
