Description

  • 1 lb boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup crumbled feta cheese
  • 1/2 cup Italian-seasoned breadcrumbs
  • 1 large egg
  • 1 can (14 oz) whole tomatoes
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a food processor, pulse chicken breasts until finely minced.
  3. In a bowl, combine minced chicken with garlic, parsley, feta cheese, breadcrumbs, egg, salt, and pepper. Mix gently until just combined.
  4. Roll mixture into golf-ball-sized meatballs and place on the prepared baking sheet.
  5. Bake for 25 minutes or until golden brown.
  6. For the sauce, heat olive oil in a saucepan over medium heat. Add crushed canned tomatoes, season with salt and pepper; simmer for 10 minutes.
  7. Serve meatballs drizzled with sauce.
